About my ingredientS
I work with local vendors when I can! The fresher, the better! If you have allergies, please ask me about specific ingredients:
My sourdoughs have gluten only, with a variety of different wheat and ancient grains
Most of my pastries will have dairy and eggs
I do not generally bake with nuts, but trace amounts may be present
If you are looking for gluten-free, dairy-free, egg-free, Saturday is the best bet, or order ahead and I can bake something special for you!

These are my regular items that you’ll find almost every day (unless I am sold out!)

Sourdough Loaf
Sourdough contains high-gluten bread flour, water, salt, and my special sourdough starter made with whole wheat and spelt.

Shokupan (Japanese milk bread)
Japanese milk bread contains bread flour, dairy, butter, sugar, honey, salt, and yeast.

Hong Kong inside-out Coconut Bun
These buns have flour, eggs, dairy, and coconut.

Stringtown Grocery
I buy most of my ingredients at Stringtown Grocery in Kalona. They carry everything in bulk. but make sure you bring cash or check because they are technology free.

Hansen’s is a single-source daily located near Waterloo. They provide all of my butter, milk, ad cream. Sign up for their amazing tour and meet all the cows in person!

King Arthur Baking Company
King Arthur has a great selection of flours for baking. I use their high-gluten, all-purpose, and whole wheat flours.

Janie’s Mill provides a wide variety of speciality and exotic flours and whole grains that I use in different breads and pastries.

Yellow Table Farm provides delicious eggs with gorgeous deep yellow yolks.
